I am so excited to share this recipe with you because it is so so loved in my home! During the winter, I probably make this every other week. It’s full of colorful veggies and quick to prepare, so it is one of my favorite healthy and go-to meals.
I have a list of helpful tips below. These are just things that I do when I am making this that I think make life easier! They are by no means required!
I encourage you to take this recipe and alter it for your life and preferences! What is great about this soup especially is that you can really play around with what types of vegetables, beans and noodles you prefer. Make it your own!
This will serve about 4-6 people. My boyfriend and I eat this for two nights (it reheats very well) and then I usually have a bowl leftover for lunch on the third day!
Ingredients:
8 cups Vegetable Broth
1 tbsp Olive Oil
4-5 Celery Stalks
4-5 Carrots
1/2 cup Yellow Onion
1 Zucchini
1 can Dark Red Kidney Beans
1 can Cannellini Beans
1 can Diced Tomatoes
Ditalini Noodles
Salt + Pepper
Shredded Parmesan
Directions:
- Heat olive oil in and diced onion in a large pot until the onions are softened and translucent – about 5 minutes.
- Add in diced celery and carrots. Cook until they are slightly softened.
- Add in the vegetable broth, beans, zucchini and tomatoes.
- Add salt and pepper to taste.
- Cook covered about 20 minutes on medium heat.
- Cook pasta separately as directed.
- Serve with parmesan and additional pepper on top.
Helpful Tips:
- Use a large pot! The one I use is an 8-quart pot with a lid.
- Chop the carrots, celery and zucchini into bite-sized pieces – about 1/2 inch.
- Rinse beans in cold water before adding them to the pot.
- Once you drain the boiling water from the noodles, add a little bit of broth (about 1/4 cup) from the soup back into them to keep them from sticking together.
- Fill your bowl with mostly minestrone and then top with noodles.
